Creamy No Cook Mints~Kayla Has the Skills

Kayla is really beginning to show her cooking skills lately! At almost 13 years of age, she knows how to read a recipe, bake from scratch, and almost can cook a complete meal for the family! So excited about that!

Her latest creation are these creamy no cook mints that she discovered in my Kitchenaid cookbook. They are great to get rid of foul tasting food in your mouth (like garlic or onions). Just pop one in your mouth after dinner and voila! No more smelly breath! They keep well in the refrigerator (which is where ours are set).

Creamy No Cook Mints

Ingredients:

  • 3 ounces cream cheese
  • 1/4 tsp mint extract
  • 2 drops green food color
  • 4 1/4 to 4 1/2 cups powdered sugar

Directions

Place cream cheese, mint extract, and food color in mixer bowl and beat until smooth. Gradually add
powdered sugar and mix until mixture becomes very stiff. Shape mixture into 3/4 inch balls,using 1 tablespoon for each ball. Roll in superfine sugar. Place on waxed paper covered with superfine sugar. Flatten slightly with thumb to form 1/4 inch thick patties or cut in any shapes with cookie cutters.Store mints, tightly covered, in refrigerator or freeze them.
