Okay–THIS recipe is definitely a keeper! I used this one to make a wonderful cake this past week and topped it with a homemade strawberry cream cheese icing! YUM
Yes, I know that boxed cake mixes can be bought for under a dollar and sometimes free with coupons, but this comes together SO quickly that you won’t even blink quick enough and you will already have it done. . .AND the best part is YOU will know what ingredients are being used!
So, without further ado, here is the recipe!
Yellow Cake Mix
Ingredients
1 7/8 cups of flour
2 1/2 teaspoons of baking powder
1 teaspoon of salt
1 1/4 cups of sugar
1/2 cup of vegetable shortening
Directions
Mix together flour, baking powder, and salt; stir together to blend. Mix in the sugar. Cut in the shortening into the dry ingredients until the mixture looks crumbly. Label and store in a sealed plastic bag at room temperature and mark it as “Yellow Cake Mix”.
This mix makes one box of cake mix. Each package makes two 8 or 9 inch layers, or one 9×13 rectangle cake, or 18 cupcakes!
Now, when you are ready to make the cake:
Here is what you do!
Preheat the oven to 375 degrees. Pour 1 package of your mix into a mixing bowl; add 3/4 cup of milk and 1 1/4 teaspoons of vanilla extract. Beat at slow speed for two minutes. Scrape the sides of the bowl as you beat. Add 2 eggs; beat 1 minute more.
Grease and flour your choice of pan. Spread batter evenly.
Bake round cakes 25 minutes
Bake 9×13 cakes for 30-35 minutes
Bake cupcakes for 20-25 minutes
or until a toothpick inserted in the center comes out clean
You now have an item to add to your growing pantry stock!
