Okay, I have to tell you about this new salsa that I discovered! It is AH-MAZ-ING!
But first–an update on KY Girl Cooks. I have decided to put that website on hold for just a little while. The reason for that is because I really want to get it designed professionally and everything and I don’t have the funds to do that just yet. So I am going to park it and once I get it all designed like I want–THEN I will do a serious launch on there and everything!
So for now, recipes will be shared here amongst all the other hoopla that I write about here
Now onto my newest creation–Kiwi Salsa!
I had some kiwi that needed to be used up, so we did a search for a recipe and this one came up. Now if you are like me and love salsa, then you will love this one as well! I think next time I make it though, I will puree a little bit of it and see how a smoother kiwi salsa tastes (my hubby’s idea).
Here is what you will need to make this recipe:
- 6 kiwis, peeled and diced
- 1 small onion, diced
- 1 jalapeno pepper, diced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1/2 teaspoon cumin
- 1/2 teaspoon curry powder
Chop up your kiwi and place in a bowl.
Also chop up your onion and jalapeno and then throw them in the bowl also.
Lastly, add all your spices to the bowl and then mix to combine.
Cover and set it in the refrigerator for a couple of hours and let the flavors marry together! It will be DEELISH!
Grab a few tortilla chips, sample, and ENJOY!

Kiwi Salsa
Ingredients
6 kiwis, peeled and diced
1 small onion, diced
1 jalapeno pepper, diced
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon honey
1/2 teaspoon cumin
1/2 teaspoon curry powder
Directions
Mix kiwi, onion, jalapeno pepper, lime juice, olive oil, honey, cumin, and curry powder together in bowl. Cover and allow to rest for 1 hour at room temperature. Refrigerate until ready to serve.
