Here is a quick tip I read in the October issue of Rachel Ray’s magazine. You can cook two eggs in the microwave in about 45 seconds! I had to try it and you know what? It works!

45 Second Scrambled Eggs
1 microwave safe coffee cup
1 tablespoon of butter
2 eggs, beaten
1 tablespoon of milk
shredded cheese, for topping
salt and pepper to taste
Take the butter and rub all the sides and bottom of your coffee cup.
Pour in the beaten eggs and the milk and mix together. Place it in the microwave for 45 seconds or until the eggs are set (microwaves vary in watts, so cook it until they are set).
Once eggs are set, sprinkle the cheese on top and season with salt and pepper!
Enjoy your quick and easy breakfast.
