Last week, Kayla and I had a great day shopping at the mall and having lunch afterwards. She is one of my favorite people to shop with, and we always make sure to visit the local Starbucks so she can grab her new favorite drink, the Caramel Frappucino and I can get my Peppermint Mocha coffee. Because we live 20 minutes away from the nearest Starbucks, she decided that she would try to recreate this drink so that she can have it at anytime instead of having to wait until we go shopping.
I have to say that she definitely did a fantastic job recreating the Starbucks Caramel Frappucino. It turned out to be a great Copycat Recipe!
- 1¾ cups crushed iced
- ¾ cup of really strong coffee mixed with ½ cup of milk
- ¾ cup your choice of milk
- 3 tablespoons sugar
- 2 tablespoons of caramel syrup (like what is used for ice cream)
- whipped cream
- Caramel syrup for drizzling
- Blend all the ingredients except the whipped cream and the caramel syrup for drizzling in a blender for 30-45 seconds.
- Pour into a tall glass and top off with whipped cream and garnish with Caramel Syrup. Best served with a straw. Enjoy!
If you prefer Chocolate syrup, the just sub that out where the caramel is mentioned.

This is my daughter’s own version copycat clone frappuccino recipe. It tastes just as good if not better than the actual recipe!

This month for the Behind the Curtain Dessert Challenge, we were given coconut and lime to work with. Now, I don’t know about you, but when I hear those two words together, my first thought is a smoothie of some kind, so that is exactly what I decided to make. Coconut and lime are tropical, so I added some pineapple into mine to really give it that delicious flavor. Here is my recipe for Pineapple Coconut Lime Smoothie.
This smoothie was super delicious and really hit the spot. In mine, I used coconut milk, but I am sure that you can purchase a coconut and add fresh to it — you just have to play around with it to get it to the consistency you are wanting.
- 1 whole pineapple (peeled cored and roughly chopped)
- 2 limes (peeled and roughly chopped)
- ½ cup coconut milk
- ½ apple (peeled cored and roughly chopped)
- Put all the ingredients in a food processor and blend until smooth.
- If you don’t want the pulp, press through a sieve. Your smoothie will still be thick.
- Serve over ice with a slice of lemon and a wedge of pineapple and enjoy!

You would think that a foodie like me could stay on top of when it’s time to reveal a new recipe, but yesterday was SO busy for me that I totally forgot what I was supposed to be doing! I decided to join a new recipe swap site this month. Little Hungry Girl hosts every month The Suprise Recipe Swap.
The SRS (Surprise Recipe Swap) is a wonderful opportunity to meet other bloggers, build blogging friendships and explore others recipes.
It’s also a fun and easy way to add more exposure to your blog – increasing your traffic by getting link backs from others, being mentioned on social media networks, simply finding new followers!
This month, the blog I was assigned was Who Needs a Cape. I had THE hardest time pinning it down to one recipe as there were so many yummy ones to choose from. Who Needs a Cape is run by 6 fabulous ladies who can flat cook! I finally decided to make their yummy strawberry banana smoothie since I am trying very hard to watch what I eat these days.
- 3 cups frozen strawberries
- 1 whole ripe banana
- 1 cup vanilla or plain yogurt ( I try to get one that has at least 10 grams of protein)
- 2 cups orange juice
- 4 Tbsp. sugar or honey
- 1 cup ice
- 2 Tbsp. wheat germ
- 2 Tbsp. ground flax
- splash of milk
- Put all ingredients into blender.
- Blend until smooth.
- If it seems really thick add in the splash of milk to thin it out.
- Pour into cups and enjoy!
- Garnish with extra fresh strawberries on the side
Even though the holidays are over, the chill is still in the air so there are many families that still love that taste of Nog. Me — I am not a big fan of Nog, but this recipe for Almong Nog has me rethinking the whole nog thing.
To make this yummy drink, you only need 3 ingredients — almond milk, brown sugar, and whipped topping. If you want to spike it, you can add an ounce of Amaretto, but we do not drink in our home, so we like it non-alcoholic.
Over medium-low heat, stir desired amount of almond milk until very warm and then add brown sugar to taste. Once you get it finished, you can serve the drink in these really neat “no sleeve” required coffee cups.

Green Mountain Coffee has some new flavors — just for the holiday season. They recently sent me 2 to try, Spicy Egg Nog and Gingerbread flavored. I loved both flavors, but the main winner in my home — the one we went through the quickest was the gingerbread flavor. I created a Peppermint Gingerbread Mocha and every single night, my family wanted a cup of coffee as we sat around watching Christmas movies.
- 6 cups of freshly brewed Green Mountain Gingerbread Coffee
- 1 ½ cups Milk
- 4 squares BAKER’S Semi-Sweet Chocolate
- 1 tbsp. peppermint extract
- 8 peppermint sticks
- Prepare Coffee in coffee pot per package instructions.
- Cook finished Coffee, milk and chocolate in large saucepan on low heat 5 to 7 min. or until chocolate is melted and mixture is heated through, stirring occasionally.
- Stir in extract.
- Pour into mugs.
- Add peppermint stick to each.
- (optional) you can add whipped topping and shaved chocolate to the top.

I am so new to all the different kind of flavored milks out there. All my life all I have ever drank is just plain white milk. But lately, I have been living on the edge. I totally LOVE milkshakes. Now that I can make them at home, there is really no need to get one from a fast food or ice cream joint. In my family’s opinion — they are even better from MY kitchen.
The ingredients are all pantry staples and they are made without ice cream
- 2 cups ice
- 2 cups of milk
- ⅔ cup sugar
- 1 teaspoon vanilla
- 2 tablespoons corn oil plus a 5-second squirt of non-stick spray for emulsification purposes
- Put all ingredients in a blender and blend until well incorporated. DO NOT leave out the oil. You will thank me later
If you want a thicker shake, add more ice. For thinner shakes, just add more milk.

I have a new love. It comes in the form of a green milkshake flavored with mint. It is H-E-A-V-E-N. Not joking. I am so glad that McCormick spices sent me all these wonderful new recipes to try out with their products, because I seriously had forgotten how easy it was to whip up a delicious dessert in minutes.
Do you see how delicious this looks? It has a hint of mint and the yummy homemade whipped cream just completes this shake!

Here is the recipe, courtesy of McCormick’s Spices. I did double mine so that everyone in my family could have a big shake (I have 4 people in my family). You can make all your friends green with envy this year as well!
Your family will rave for days about this delicious milkshake!
Ingredients
- 1 pint (2 cups) vanilla ice cream
- 1 cup milk
- 1/2 teaspoon McCormick® Pure Peppermint Extract
- 1/4 teaspoon McCormick® Green Food Color
- Whipped cream and chocolate shavings (optional)
Instructions
- Place ice cream, milk, peppermint extract and green food color in blender; cover. Blend on high speed until smooth.
- Pour into glasses. Top with whipped cream and chocolate shavings, if desired. Serve immediately.
The cold weather is right around the corner in our neck of the woods and that has me thinking about hot cocoa. There is nothing like a good old cup of decadent hot chocolate

Why Make Your Own Hot Chocolate
I used to always buy boxed hot chocolate from the store until I learned how simple and easy it is to make hot cocoa at home. It is extremely inexpensive to make and one batch will almost do us all winter long!
Every year when we watch The Polar Express, I make a huge batch and we share it when we have friends over and sing the hot chocolate song! (You want to go sing it now don’t you?)
My favorite way to serve hot cocoa is with a dollop of whipped cream, and shaved chocolate on top. All you need for the shaved chocolate is a Hershey bar and a veggie peeler — instant shaved chocolate!

Ingredients
- 4 Cups Powder Milk
- 2 Cups White Sugar
- 3/4 cup Baking Cocoa
- Pinch of Salt

- Measure all the ingredients into a blender and blend it up for about 1 or 2 minutes or until it’s mixed really well and a fine powder. You may have to do this in batches. This is key because it helps it to blend into the water.
- To Prepare: Spoon 1/3 cup of the hot cocoa mix into a cup or mug. Add boiling water to the top, stir and serve.
Everyone that comes to my house raves about how good my sweet tea is. In reality though, its not my recipe. . .it’s my mother in love’s! She taught me how to make it when Stephen and I first got married and we have been making that way ever since
Here is the secret though–
~I don’t cook it on the stove
~It doesn’t go in a sun jar outside
~It’s not store bought either
My secret is the good ole’ microwave! It does a great job making tea!
Basically what I do is use a microwave safe bowl and fill it with water (not all the way to the top). It has to be really hot water so it can melt the cup of sugar you are going to add in there. Whisk it up until the sugar has dissolved and then use 4 regular size tea bags. Place the whole thing in the microwave and cook for 5 minutes and 30 seconds.
Now the second trick to this is DON’T pour it in the tea jug right away. I usually place mine in the refrigerator still in the bowl and let it sit there for about 3 to 4 hours before putting it in the jug. This gives the tea bags time to mellow out with the sugar and get real concentrated with flavor
To make the tea up, grab a 2 quart pitcher and fill it half way with water. Pour in the tea and remove the tea bags. Continue filling up the rest of the way –all the way to the top! Refrigerate until ready to drink.
That’s it! Now go and enjoy your iced tea!
